Ghostly Halloween Cupcakes

Ingredients

For the Cupcakes

  • 1 ¼ cups all-purpose flour
  • 1 tablespoon Spicy Caribbee Cocoa Powder (unsweetened)
  • ¾ teaspoon baking powder
  • ¼ teaspoon salt
  • ¾ cup unsalted butter, softened
  • ½ cup granulated sugar
  • ⅓ cup brown sugar
  • 3 large eggs
  • 2 ¼ teaspoons Spicy Caribbee Puerto Rican Vanilla
  • ½ cup sour cream
  • 3 teaspoons red food coloring

For the Frosting

  • 8 ounces cream cheese, at room temperature
  • 4 tablespoons unsalted butter, softened
  • 2 teaspoons Spicy Caribbee Puerto Rican Vanilla
  • ⅛ teaspoon salt
  • 2 ¼ cups confectioners’ sugar

Instructions

Prepare the Cupcakes

  1. Preheat your oven to 350°F (175°C). Line a standard 12-cup muffin tin with paper liners.

  2. In a medium bowl, combine the flour, Spicy Caribbee Cocoa Powder, baking powder, and salt. Set aside.

  3. In the bowl of a mixer, beat the softened butter, granulated sugar, and brown sugar until well combined and lightened in color.

  4. Add the eggs one at a time, mixing well after each addition. Then, mix in the Spicy Caribbee Puerto Rican Vanilla and sour cream until smooth.

  5. Add the red food coloring and mix until incorporated.

  6. Gradually add the flour mixture, mixing on low speed until just blended.

  7. Divide the batter evenly among the prepared muffin cups, filling each about ¾ full.

  8. Bake for 20 to 25 minutes, or until a toothpick inserted into the center comes out clean. Allow the cupcakes to cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.

Prepare the Frosting

  1. In a mixing bowl, beat the cream cheese and butter together until smooth.

  2. Add the Spicy Caribbee Puerto Rican Vanilla, salt, and confectioners’ sugar, mixing until the frosting is smooth and fluffy.

  3. Fill a piping bag with the frosting and decorate the cooled cupcakes. Alternatively, you can use a knife to frost them.
